A bamboo paddle and rolling mat are indispensable tools to a sushi chef. The paddle is used to toss warm rice with sushi vinegar to create seasoned rice, the basis of all sushi.
The rolling matt is used to roll nori (toasted seaweed sheets) around the seasoned rice and filling. To prepare an "inside out roll" (rice on the outside), wrap the mat with plastic wrap to prevent the rice from sticking to it.
